Vegetable Pasta Soup

In winters, a hot bowl of soup and a warm blanket is all I need only when I am down with cold, else you will find me with a big mug of hot chocolate. I love this vegetable pasta soup because it is a complete meal in itself and it has my favorite pasta. This is a one pot meal where you put all the ingredients in a pot and let it cook, that’s it !! Easy right? And it is a healthy meal with all the veggies in it. You can add/eliminate vegetables of your choice. So when are you making this healthy bowl for yourself and your family??

Vegetable Pasta Soup

Yield- Serves 4

INGREDIENTS

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3-4 cloves garlic, crushed
  • 2 bell pepper, diced
  • 8-10 cauliflower florets,
  • 8-10 baby corn, chopped
  • 1 carrot, chopped
  • 3 tbsp, green garlic leaves, chopped
  • 6-7, tomatoes, chopped
  • 1 cup boiled pasta
  • 1 litre water
  • 2 -3 tsp dried basil / fresh basil leaves
  • 1 tsp oregano
  • 2 tsp black pepper powder
  • salt according to taste

INSTRUCTIONS

  1. Heat oil in a large pan, add onion and garlic, cook stirring continuously till the onion has softened. Add carrot, bell pepper, cauliflower florets, green garlic leaves and baby corn. Cook for 5 minutes, stirring occasionally.
  2. Add the chopped tomatoes/ tomato puree and water or vegetable stock, bring to a boil, then reduce the heat  and simmer for 20 minutes.
  3. Add the boiled pasta. Season with salt and pepper. Stir in the basil and oregano. Serve in bowls with coriander and Parmesan cheese sprinkled on top and with slices of garlic bread.
