Penne pasta with creamy mushroom sauce

I love pasta with all kinds of sauces- red sauce, pink sauce, white sauce or pesto sauce !! When I am bored of daal chawal, the only thing that comes to my mind is pasta. Why? It is easy,simple,  quick to make, easily available ingredients, tastes amazing and is filling. Make a bowl of pasta and have it while it is still hot !! Mushrooms in white sauce taste delish and you can add more veggies like zucchini, broccoli, bell peppers if you want. The best part is that it is not high on calories as we have used minute amount of cheese, so enjoy it without any guilt.

Penne pasta with creamy mushroom sauce

Yield – serves 2

INGREDIENTS

  • 1 tbsp butter
  • 1 tbsp all purpose flour
  • 3/4th cup milk
  • pinch of nutmeg
  • 2-3 tbsp cheese
  • 1 cup mushrooms
  • 3-4 cloves garlic
  • 1 small onion
  • 1 -2 tsp oregano
  • 1 tsp thyme
  • 1.5 cup penne pasta
  • salt as required
  • black pepper as required
  • 2 tsp chopped coriander

INSTRUCTIONS

  1. Heat water in a large pan, add a drop of oil and salt to the water. Add the pasta when the water comes to boil. Cook the pasta for 7-10 mins or till tender. Drain and keep them aside.
  2. Heat oil in a pan, add finely chopped garlic and onion. Cook till the onion turns light brown. Add thyme, oregano, black pepper and salt. Add the chopped mushrooms and cook while continuously stirring for 10 minutes or till the water from the mushrooms has evaporated.
  3. For the white sauce, heat butter in a pan, add all purpose flour, stir continuously till it turns pink. Add milk, nutmeg, black pepper and bring to a boil, stirring constantly. Add the cheese to the white sauce.
  4. Add the mushroom mixture and drained pasta to the white sauce and mix. If the sauce is too thick add water to get the desired consistency. Garnish with coriander and some some cheese.
