Eat breakfast like a king but make sure that your breakfast has carbs, proteins, fats, minerals and vitamins. Our body needs nutrition from all the elements of food, hence the balance is very important. No, I was never so particular about what is on my plate. I ate everything and ended up overeating most of the times. Never listened to my body. But I do realize now, how important it is to listen to your body, to take care of it and eat right. It is difficult to change the habits but the efforts are constant.

This breakfast bowl has the required carbs, proteins, fats, minerals and vitamins in the form of oats, chickpeas, oil and vegetables. Its is colorful, delicious and packed with nutrients to start your day with. This masala oats veggie bowl is also easy and quick to make as all my recipes. Masala oats veggie bowl

Yield – Serves 2

INGREDIENTS

  • 1 Onion, chopped
  • 1 green bell pepper, chopped
  • 2 Green Chillies, chopped
  • 3 tbsp coriander leaves
  • 1 cup oats
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 1 tsp Coriander powder
  • Salt according to taste
  • 1 tbsp oil
  • 2 cup water
  • 1/2 cup boiled chickpeas
  • 1 Tomato, chopped
  • 1 Onion, chopped
  • 1/4 cup grated carrots
  • 1/4 cup diced beetroot
  • 4 tbsp lemon juice

INSTRUCTIONS

  1. For the masala oats, heat oil in a pan. Add cumin seeds and mustard seeds, add chopped onions when the seeds start crackling.
  2. Cook the onions till pink, add, green chillies and bell pepper. Add turmeric power, red chilli powder, coriander powder, salt, keep stirring.
  3. Add the oats followed by 2 cups of water and stir till everything is mixed well. Cook the oats for 10 mins or till the mixture becomes a bit thick.
  4. Lastly add 1 tbsp lemon juice and coriander leaves.
  5. For the chickpea salad, toss the boiled chickpeas, tomato, onion, coriander leaves with lemon juice in a bowl. Add salt as per taste.
  6. In another bowl, toss the grated carrots with lemon juice and salt. Repeat the same with beetroot. Assemble all of these in a bowl. And serve hot.
