Greek salad

Yes, This is the bitter truth that there are some days when I am determined to eat clean. The determination is so strong that I survive only on salad for the whole day. This happens when the clothes do not fit and the brain switches to panic mode. The intensity of determination fizzles out till the next morning and the word salad is erased out of my memory as if it never existed. So let me tell you how the Greek salad came into my life !

Every morning I play peekaboo with my clothes and my mother, however much I avoid, always appears out of nowhere when I open my cupboard and the clothes topple out. And what follows next is the most dreaded moment, I am lectured for my manners, clumsiness, laziness and discipline. I stand there without uttering a single word while in my head I am already in a different world where I am either choreographing a dance on the latest Bollywood song or planning to message a friend about watching a movie together. Yeah, that is what happens when you get used to being lectured everyday, your mind switches on the extra-activity compartment ( I have not yet counted as to how many compartments exist in my head). This flow of thoughts is suddenly obstructed by my mother whose voice has increased by a few decibels and I am brought back to the real world.

I am instructed to neatly arrange the clothes and on one such day while I was arranging the clothes I came across a dress which never got noticed amidst the pile of clothes. The happiness of the discovery was so high that I immediately tried it on. Happiness was short lived as I huffed and puffed to fit into that dress. Again mother appeared out of nowhere and you know what must have happened when she saw me. With a broken heart, I decided that very day to eat healthy and lose weight. Hence, Greek salad was made on this very day. That was the only day I ate salad, I guess I need another old dress to remind me about the ever increasing waistline.

I am not a big fan of salads but I do get tempted if they are colorful, fresh and delicious. I love Greek salad because it is incredibly wonderful and refreshing. You can make modifications to this recipe by adding more veggies or feta cheese and it will taste yum. The juicy tomatoes, fresh cucumbers, bell peppers, creamy feta/ succulent cottage cheese tossed in olive oil and lovely herbs makes this everyone’s favorite. There are so many variations available for the salad dressing, you can try a different one every time and enjoy your salads. Writing this post has inspired me to make another salad and I am already getting ideas. INGREDIENTS

2 large tomatoes, diced

1 cucumber, diced

1 onion, thinly sliced

1 green bell pepper, diced

2 tablespoon chopped fresh mint leaves

1 lemon, juiced

1 tablespoon black olives

1/4 cup cottage cheese, diced

1 tablespoon olive oil

1 teaspoon oregano

Salt and black pepper

INSTRUCTIONS

  1. In a bowl, combine the tomatoes, cucumber, bell pepper, onion, mint leaves, black olives and cottage cheese.
  2. For the salad dressing, whisk together olive oil, lemon juice, oregano, black pepper and salt.
  3. Pour the dressing over the salad, toss and serve.

NOTES

  • You can also add lettuce, red and yellow bell peppers to this salad. Parsley leaves can also be used.
  • For the salad dressing, you can variate by using minced garlic or dijon mustard.
  • Feta cheese is actually used in Greek salad but if health conscious then go for cottage cheese/tofu.

I think v all have such outfits in our wardrobe where our body fitted once & their is no chance presently. Kudos to the theme of healthy eating.       Feta cheese – as far as I know, you should find it at Special Groceries (near shyamal crossroads) and Magsons.

    1. Hi Vartika !! Thank you, I am glad you liked it ! Well there is a sad news, you cannot bake this in a microwave. You have to bake it in an oven. Also, use a loose bottom pan/ springform tin to make this cake, as you cannot afford to invert the cake since its a cheesecake (should be handled very delicately ). I have explained to how bake this cake in the cheesecake post, you can refer it once again and let me know if any doubts 🙂
