Merry Christmas !!! I know I am late in posting this recipe but you still have few days left. Who said you can’t have the Christmas fruit cake after Christmas ? You can enjoy this cake on your new year eve as well with a mug of hot chocolate. Yes it is only calorific food that I talk about !! The best part is that this cake is eggless, alcohol free and you will still love it for sure. The measurements of the dry fruits to be soaked in the juice are approximate since I did not bother to use the measuring cups. Buttery, crumbly and melt in the mouth shortbread cookies or butter cookies are easy to make and taste divine. All you need is 3 ingredients and the cookies are ready within 15 mins. Enjoy these cookies with a hot cup of tea. These shortbread cookies are buttery and crispy, they melt in your mouth leaving a beautiful aftertaste. They are versatile too! Coat them with chocolate to get chocolate butter cookies, add a pinch of cinnamon for cinnamon cookies, or add cardamom and rose water or add espresso/ coffee powder or just glaze them. There was a time when I thought I cannot make pasta at home, I used to think every international cuisine was too difficult to be made at home. They say you never know it until you try it. So one fine day, I gave it a try and was amazed to find out that it is so simple and easy. Yes, you don’t need any hard to find ingredients, no complex recipe, toss everything in a pan and within few minutes it is ready !! A delicious pink sauce pasta/ tomato cream sauce pasta for your lunch or dinner is no hassle. I have used penne pasta and some vegetables. You can add more vegetables of your choice like zucchini, bell peppers (red, yellow and green), mushrooms, broccoli and baby corn. Okra, also known as bhindi, ladyfinger and Bende in kannada, is used in preparing curry as well. It is a popular curry made in Udupi which is my native place. The summer vacation visits to Udupi were always awaited because it introduced me to a different world of food and I started developed a liking for it. Grandma’s kitchen was where all the magic happened. Different types of curries, chutneys, rice and payasams were relished by us kids and more importantly it was the love that enhanced the taste of every dish. South Indian cuisine is one of my favorites, not because I belong to that place but the warmth, love and satisfaction experienced upon eating each morsel of hot steaming rice and sambhar with your hands cannot be expressed, only experienced. Food does wonders and having this hot steaming rice with bende koddel/ Okra curry will definitely make you happy. Meals like these are my favorite any day of the year.  I use sambhar powder, specially made in Udupi, which makes this curry all the more delicious. The longest dance festival is over and most of us have not got over the hangover of the nine nights of Navratri. I have been moving around the house like a zombie, sleeping, eating, wondering what to do and sleeping. That is all I have been doing since last two days and now I am struggling to write this post.
