Sweet corn and capsicum sandwich

Everyone in the family loves to have sandwiches for breakfast or for teatime snacks. Sweet corn and capsicum sandwich is one of the favorites. I love all kind of sandwiches, be it vegetable sandwich, grilled cheese sandwich, cottage cheese sandwich or mayo sandwich. Sandwiches are a good lunch box option too for your kids. Use lots of veggies for the filling and be assured that your child is getting all the nutrients. You can use multi-grain bread or whole wheat bread for healthier option, I have used white bread for this sandwich. For sweet corn and capsicum sandwich, I have used boiled sweet corn, boiled baby corn and capsicum for the filling. I have used a combination of mayonnaise, mustard sauce and ketchup for the sauce and it tastes amazing. I have not added cheese but you are free to add cheese or cheese spread. You can make a different version of this sandwich by adding onion, broccoli and mushroom. There is no limit when it comes to playing with the filling and flavors. Eat breakfast like a king but make sure that your breakfast has carbs, proteins, fats, minerals and vitamins. Our body needs nutrition from all the elements of food, hence the balance is very important. No, I was never so particular about what is on my plate. Yes chilled fruit smoothies to begin the day with and let me tell you its not less than a dessert. And who would not love to start the day with a dessert ! CHOCOLATE NICE CREAM Author: The Cooking Soul Yield – One Smoothie Bowl INGREDIENTS 3 bananas (frozen) 2 tsp cocoa powder 3 tbsp yoghurt / coconut milk (for vegan recipe) 2 tbsp pomegranate seeds 3-4 coconut pieces INSTRUCTIONS Add frozen banana, cocoa powder and yoghurt/ coconut milk in the blender. Mushroom stuffed pancakes

There are days when I crave for cheesy stuff but then I also think about balancing it with healthy options.  I intended to make stuffed pancakes- soft pancakes stuffed with cheese, mushrooms with the warm gooey cheese oozing out the moment I cut it. Okay I did control myself on not adding too much cheese. Made this few days back but took me a while to update it here. Hoping your weekend breakfast is sorted with this yummy pancake. So yes, I did not want to use all purpose flour for the pancakes, I opted for the fermented rice and lentil batter i.e the dosa batter. This was the balance I was talking about. Now lets get going on how to make the pancake.
