Mushroom stuffed pancakes

There are days when I crave for cheesy stuff but then I also think about balancing it with healthy options.  I intended to make stuffed pancakes- soft pancakes stuffed with cheese, mushrooms with the warm gooey cheese oozing out the moment I cut it. Okay I did control myself on not adding too much cheese. Made this few days back but took me a while to update it here. Hoping your weekend breakfast is sorted with this yummy pancake. So yes, I did not want to use all purpose flour for the pancakes, I opted for the fermented rice and lentil batter i.e the dosa batter. This was the balance I was talking about. Now lets get going on how to make the pancake. If you are using the fermented dosa batter then you have to start the preparations a day before, if you do not have enough time then you can make this with the pancake batter itself. Penne Pasta with Pink Sauce

Penne Pasta with Pink Sauce

There was a time when I thought I cannot make pasta at home, I used to think every international cuisine was too difficult to be made at home. They say you never know it until you try it. So one fine day, I gave it a try and was amazed to find out that it is so simple and easy. Yes, you don’t need any hard to find ingredients, no complex recipe, toss everything in a pan and within few minutes it is ready !! A delicious pink sauce pasta/ tomato cream sauce pasta for your lunch or dinner is no hassle. I have used penne pasta and some vegetables. You can add more vegetables of your choice like zucchini, bell peppers (red, yellow and green), mushrooms, broccoli and baby corn. Pink sauce pasta is basically a tomato sauce mixed with cream which gives a creamy texture. Some use white sauce/ bechamel sauce instead of cream for the pink sauce. Once upon a time, when I had no knowledge about food, I used to think pink sauce is made from beetroot (beetroot gives a pink color no !!) When you think about Italian cuisine, the first thing that comes to […]

Okra Curry/Ladyfinger Curry/Bende koddel

Okra, also known as bhindi, ladyfinger and Bende in kannada, is used in preparing curry as well. It is a popular curry made in Udupi which is my native place. The summer vacation visits to Udupi were always awaited because it introduced me to a different world of food and I started developed a liking for it. Grandma’s kitchen was where all the magic happened. Different types of curries, chutneys, rice and payasams were relished by us kids and more importantly it was the love that enhanced the taste of every dish. South Indian cuisine is one of my favorites, not because I belong to that place but the warmth, love and satisfaction experienced upon eating each morsel of hot steaming rice and sambhar with your hands cannot be expressed, only experienced. Food does wonders and having this hot steaming rice with bende koddel/ Okra curry will definitely make you happy. Meals like these are my favorite any day of the year.  I use sambhar powder, specially made in Udupi, which makes this curry all the more delicious. If you do not have this udupi sambhar masala then you can use whichever is available. Also without sambhar masala this curry still tastes good. […]

Rice Kheer for the festive occasion

The longest dance festival is over and most of us have not got over the hangover of the nine nights of Navratri. I have been moving around the house like a zombie, sleeping, eating, wondering what to do and sleeping. That is all I have been doing since last two days and now I am struggling to write this post. I am unable to put in words the madness of those nine nights, trust me it can only be experienced. The day starts with deciding the place which leads to countless messages on whatsapp discussing the availability of the passes, the dress code, time to reach the venue and everything apart from that. You are glued to the mobile whole day fearing that you do not miss any important piece of information, which rarely happens, charging the phone every few hours and your mom is super pissed with you for being so useless in life. By any chance if you are like me who realizes at the last minute that there are no clothes to wear then you can imagine the chaos. I am scratching my head, pulling my hair and howling as to what to wear while I get calls from […]
