Sweet corn and capsicum sandwich

Everyone in the family loves to have sandwiches for breakfast or for teatime snacks. Sweet corn and capsicum sandwich is one of the favorites. I love all kind of sandwiches, be it vegetable sandwich, grilled cheese sandwich, cottage cheese sandwich or mayo sandwich. Sandwiches are a good lunch box option too for your kids. Use lots of veggies for the filling and be assured that your child is getting all the nutrients. You can use multi-grain bread or whole wheat bread for healthier option, I have used white bread for this sandwich. For sweet corn and capsicum sandwich, I have used boiled sweet corn, boiled baby corn and capsicum for the filling. I have used a combination of mayonnaise, mustard sauce and ketchup for the sauce and it tastes amazing. I have not added cheese but you are free to add cheese or cheese spread. You can make a different version of this sandwich by adding onion, broccoli and mushroom. There is no limit when it comes to playing with the filling and flavors. Whole wheat cumin cookies/ Atta jeera cookies

Jeera cookies/cumin cookies are perfect to go with a cup of tea.  Again a very easy recipe plus it is made from whole wheat flour. With the same recipe, we can omit the jeera/cumin and make cardamom cookies. If you replace the jeera with dry fenugreek leaves, you will get a different flavour. This way we can experiment with different flavors. You can also try Whole wheat chocolate chunk cookies which I made some time back. Another favorite recipe to be tried is Butter cookies. If you are not too fond of sweet cookies, we can make savoury cookies too. Yes, I have been planning to make savoury cookies soon. Cheese and mustard, sun dried tomatoes and pepper , o yum, sounds great right?? It has been raining since  morning today, the weather is so pleasant right now. Quick and simple recipes attract me the most because I get highly irritated when I am hungry. It becomes a lot more easy if the ingredients are minimum, less complicated recipe and quicker preparation time. I do have many such recipes, thanks to my hunger pangs, but today I will be sharing bruschetta variations with mushrooms and red beans. The classic bruschetta with tomatoes, basil and cheese is an all time favorite. Also, quick and easy ! I like to experiment with the toppings now and then cause I love change. Cookies ! How many of you are a big fan of cookies? Ummm not me really but I do love Butter cookies. Melt in the mouth buttery cookies with a cup of coffee, so awesome right? Just the thought leaves me drooling ! But that does not stop me from from baking different types of cookies. Hence, today sharing the recipe for whole wheat chocolate chunk cookies. Whole wheat, egg free, butter free chocolate chunk cookies for guilt free indulgence. This recipe does replace the all purpose flour and butter but a dessert always has to be had in moderation. Irrespective of the healthy substitutes, you are still consuming the carbs and fats. So this is definitely healthy comparatively but you can indulge yourself once in a while. I loved the earthy flavor of the whole wheat flour in these cookies. The chocolate chunks just makes it all the more yummier. You can use chocolate chips too. Yes chilled fruit smoothies to begin the day with and let me tell you its not less than a dessert. And who would not love to start the day with a dessert ! CHOCOLATE NICE CREAM Author: The Cooking Soul Yield – One Smoothie Bowl INGREDIENTS 3 bananas (frozen) 2 tsp cocoa powder 3 tbsp yoghurt / coconut milk (for vegan recipe) 2 tbsp pomegranate seeds 3-4 coconut pieces INSTRUCTIONS Add frozen banana, cocoa powder and yoghurt/ coconut milk in the blender. There are days when I crave for cheesy stuff but then I also think about balancing it with healthy options.  I intended to make stuffed pancakes- soft pancakes stuffed with cheese, mushrooms with the warm gooey cheese oozing out the moment I cut it. Okay I did control myself on not adding too much cheese. Made this few days back but took me a while to update it here. Hoping your weekend breakfast is sorted with this yummy pancake. So yes, I did not want to use all purpose flour for the pancakes, I opted for the fermented rice and lentil batter i.e the dosa batter. This was the balance I was talking about. Now lets get going on how to make the pancake. In winters, a hot bowl of soup and a warm blanket is all I need only when I am down with cold, else you will find me with a big mug of hot chocolate. I love this vegetable pasta soup because it is a complete meal in itself and it has my favorite pasta. This is a one pot meal where you put all the ingredients in a pot and let it cook, that’s it !! It is easy,simple,  quick to make, easily available ingredients, tastes amazing and is filling.
